Thing 2's Strawberry Yogurt parfait (left) and my Blueberry Yogurt parfait (right).

Thing 2 and I wanted something a little different today for lunch. He’s had too much grilled cheese lately, and I was in the mood for something a little sweet. We decided on cereal and yogurt with fruit. Since I have so many empty mason jars around right now, we decided to build parfaits in tow empty pint jars.

Lunch was great. This is a really simple recipe that Thing 2 (6 years old) had no problem making, though he wound up stirring the layer together immediately.

Yogurt Parfaits
for each serving

  • 1 pint mason jar
  • 1 container yogurt (fruit flavors can add color to the parfait)
  • 1/2 cup crunchy cereal (I used granola, he used panda puffs)
  • 1/2 cup each of two types of prepared fruit (we had blueberries and banana)
  1. Put 1/4 cup of one fruit in a layer on the bottom. The next layer should be 1/4 cup of the other fruit. Then add 1/4 cup of cereal, and finally half the container of yogurt.
  2. Repeat step one to make a second layer.
  3. Enjoy immediately to prevent the tragedy of soggy cereal.
