Hubby and I have taken the day off work to prepare for tomorrow’s yard sale, and sine having him here for breakfast before school is rare, I decided to make a special breakfast for the family.

These baked pancakes have a texture that’s somewhere between a pancake and a muffin. They are perfect served just by themselves, but they can also be topped with jam, maple syrup, and/or yogurt.

Blueberry Oven-Baked Pancakes
makes 4-6 servings

  • 1/2 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 2 tbs sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • 1 cup milk
  • 2 eggs, beaten
  • 2 tbs melted butter
  1. Heat over to 350 degrees and lightly wipe a large casserole dish with oil.
  2. Combine flours, sugar, baking powder, and salt in a bowl. In another dish, mix milk, eggs, and melted butter. Make a well in the dry ingredients and pour in the wet ones. Stir just until blended; batter should be a little lumpy. Gently stir in blueberries.
  3. Pour batter into prepared baking dish. Bake at 350 until top starting to brown, for about 25-20 minutes.
