One of life's simple pleasures: the gourmet PB&J.

After seeing all the fresh jam cooling in the kitchen, Thing 2 asked for peanut butter and jelly sandwiches this week. We got a loaf of cinnamon raisin bread for the sandwiches, and today I decided that it looked so good I would join him.

It’s hard to go wrong with a PB&J, but you can. The quality of your ingredients makes a huge difference in the quality of the sandwich. A PB&J made with natural peanut butter (we grind it at the store) and home made jam is a wonderful treat. Put it on lightly toasted cinnamon raisin bread, and it’s pure luxury. I served them up with fresh cherries and vanilla soy milk for a thoroughly pleasant and simple to make lunch.

If I ever get to open a cafe, this sort of thing would be on the menu, that’s for sure.
